Trying the Viral Super Easy Lasagne Soup Recipe

This Lasagne Soup recipe has taken the internet by storm!! We got the inspiration from the wonderful Bored of Lunch who gave us an expert guide through the recipe. After trying it ourselves all we can say is how easy and fantastically delicious it is!

However, it’s caused a little bit of a stir because people on first glance just think that it’s a form of Spag Bol but you need to take our words for it - it is SO MUCH MORE! It’s lovely and creamy and full of those delicious lasagne flavours that fill us with delight!

@boredoflunch Slowcooker Lasagne Soup Bowls 🍅🍝 410 cals a bowl Everywhere I look I’m seeing versions of this so here’s a Slowcooker version. It didn’t disappoint, served with Airfryer garlic bread. Don’t forget to order the new Slowcooker book, link in bio 📕 Ingredients - 1 packet of fresh lasagne sheets - 500g beef mince - 1 jar of passata - 1-2 tbsp tomato paste - 1 tin of chopped tomatoes - 700g of passata - 1 x onion finely chopped - 1 beef stock pot - 1 tsp Rosemary, oregano, basil - 1 tsp dried chilli 🌶️ - Salt and pepper - 4 x garlic cloves - 1 tbsp Worcestershire sauce - 400ml of chicken or veg stock - 50ml of Double cream - 50g of Parmesan - Handful of mozzarella & basil Method 1. Add all ingredients to the slowcooker except the lasagne sheets, cream, basil and cheese 2. Cook on high for 4 hours or low for 7-8 3. Add remaining ingredients, cut pasta sheets into 3 and cook for a further 15-20 mins. We just want to start off by giving our props to a kitchen gadget that doesn’t always get much appreciation… how incredible are slow cookers? At the moment we’re obsessed and this beef lasagne soup recipe is working just the treat in it. What’s fantastic is how easy it is to cook this in the slow cooker - just pop everything in and let it cook away for a few hours and your delicious soup will be waiting for you! It’s fantastically easy. In our opinion - slow cookers are lit genius and if you’re thinking of your next kitchen gadget we recommend it!

The recipe:

So we’re going to start off adding some garlic - when we decide how much garlic to put in we’re going to suggest that you put enough garlic in so that your breath be stanking for a few days.

Then of course some diced onion.

Then we decided to add a red pepper in; mainly just because it was going off in the fridge - so why not chuck it in there!

Then you want to add in your herbs - not your spices! We decided to go for a bit of oregano and lil bit of basil just to keep it interesting.

Next we’re going to add our chopped tomatoes and don’t you just love it when the tin comes with those ring pulls and you don’t need to get that crusty can opener that never works out of the draw.

Anyway… you’re then going to add your two tablespoons of tomato puree.

Salt - always - salt. Salt, salt and more salt - for that flavour mmmmm!

Obviously you need to add your beef mince and what’s even better you don’t need to brown it off - it’ll all cook in the slow cooker!

You’re then going to add some Worcestershire sauce and some beef stock and make sure you mix it in well!

Then you’re going to pop the lid on and set it 4 hours and all you can do then is wait.

About half an hour before you’re ready to eat it we’re going to go in with the lasagne sheets. They say to use fresh lasagne sheets but they didn’t have any in the supermarket - and if you watched my video it always tastes that lil bit more fresh when you don’t drop them all on the floor.

You’re then going to add some cream.

A whole ball of mozzarella ripped up into piece- gosh sometimes a piece of mozzarella just slaps - really been in the mood for anything cheesy or creamy at the moment.

You’re then going to pop in a bit of parmesan.

And leave it for a little while to melt in.

The results:

Oh goodness! This dish smells absolutely delicious when you lift up the lid. Really hoping for that cheese pull when we scoop it all out - need that stringy mozzarella to do its bit.

So the verdict on the lasagne soup - this is a new winter fave! It’s delicious - the lumps of mozzarella intertwined with that strong onion garlic and herb base is just fantastic. Definitely a new slow cooker favourite!
